Protein carbonyl content; inhibition in formation of protein carbonyls (nmole carbonyl/mg of protein) against Fenton reagent. Reduced glutathione, gallic acid, quercetin, rutin, vanillin and acetylsalicylic acid were added at 62.5–1000 μg/ml. The test tubes were incubated for four hours at 37 °C followed by two consecutive centrifugations. The supernatant was used for protein carbonyl assay. Reduced glutathione was used as a positive control. Values are represented as mean ± SEM of three samples. #(p < 0.01) and §(p < 0.001) represent significant changes relative to control
